A bottle of gin resting on a table setting for high tea, with cakes and a tea-pot.

"The Earl" is a classy but deceptively simple number, best served with high tea or in a breakfast martini.

The floral body of the Earl Grey tea is brightened by a zing of citrus, creating a well rounded and versatile modern gin.

Ingredients

The following portions are appropriate for a 700ml distillation

  • 7g Juniper

  • 2.5 tsp Angelica Root

  • 1-2 Cloves (depending on size and how spicy you're feeling)

  • 1 tsp Orris Root

  • 2 tsp Coriander Seeds

  • 3.5 slices Dried Lemon

  • 1 Slice Dried Orange

  • 2.5 tbsp Earl Grey Tea (loose leaf)

Method

  1. Lightly crush the Juniper, Cloves, & Coriander Seeds in a mortar and pestle.

  2. Tear the Lemon and Orange slices by hand into smaller pieces.

  3. Place all of the ingredients into the botanical column of your still.

  4. Distil as normal.

Notes

  • If you do not have a mortar and pestle, you can use a rolling pin or handle of a kitchen knife to bruise the ingredients.

  • A "Breakfast Martini" is a cocktail - we don't recommend drinking gin until at least brunch time. Don't judge me, mum. However, if you want to spice up your "elevenses", we've got a recipe here.
