The Modern Classic - Gin Recipe

The "Modern Classic" is our default setting for Gin. Inspired by the first wave of modern gins such as Bombay Sapphire and Hendrick's, this is a spicy and floral little number that's simple enough for new-comers, but complex enough for seasoned gin fans.
The following portions are appropriate for a 700ml distillation.
Ingredients
2 large slices of dried orange (8.5g)
1 small slice lemon (3g)
7g Juniper Berries
1.5 tsp Angelica Root (3g)
3/4 tsp heaped Coriander Seeds (1.8g)
1 tsp Rose Petals (.25g)
1/4 tsp Dried Elderflower (2g)
1/4 + 1/8 tsp Pink Peppercorns (.4g)
1 pinch Orris Root (.5g)
Method
Lightly bruise the Juniper Berries, Coriander Seeds, Pink Peppercorns and Angelica Root in a mortar and pestle.
Lightly crumble the dried orange and lemon, and the rose petals.
Add all of the ingredients to the botanical column of your still.
Notes
If you do not have a mortar and pestle, you can use a rolling pin or handle of a kitchen knife to bruise the ingredients.
The strength of flavour distilled from peppercorns is heavily dependant on freshness. This recipe assumes dried but still healthily coloured pink peppercorns. Add more if they are ancient, and less if they are extremely fresh!
Do not go too crazy with the rose - err on the side of caution. Too much rose will make your gin smell like potpourri.
